Lentil Sweet Potato Soup

Ingredients

4 large Carrot , chopped
4 stalks Celery , chopped
1 medium Onion , diced
2 large Sweet potatoes , peeled and cubed
1 1/2 cup Green beans , chopped
2 cup Green lentils
1 pinch Rosemary , dried
1/2 tsp Bay leaf , crushed
1 tsp Oregano , dried
4 clove garlic , minced
15 oz Tomatoes , diced
64 oz Vegetable broth
2 tsp Salt
1/2 tsp Pepper

Directions

Combine all ingredients in a slow cooker. Turn heat on low and cook for 10 hours, adding a little more broth at the end if soup seems too thick

Note: 1 tsp fresh rosemary = 1/8 - 1/4 dried

1 fresh bay leaf = 1/2 tsp crushed bay leaf
