Four Cheese 🍅 Sauce

Ingredients

1/2 cup Olive oil
1 medium Onion
4 clove Garlic
1/2 tsp Salt
1/4 tsp Black pepper
56 oz Tomatoes , crushed
1 tsp Oregano , dried
5 leaf Basil , dried
1/8 tsp Bay leaf , crushed
1/4 cup Cheese (parmesan) , grated
1/4 cup Cheese (pecorino) , grated
1/4 cup Ricotta
1/4 cup Provolone , grated

Directions

  1. In a large pot, heat oil over medium high heat. Add onion and saute until soft and translucent, about 5-6 minutes. Add garlic, salt and pepper and cook 1 additional minute.

  2. Add crushed tomatoes, oregano, basil, and bay leaves and simmer covered on low heat for 1 hour or until thick. Remove bay leaves and add the cheeses.

  3. If using a food processor, add half the tomato sauce into the bowl of a food processor and process until smooth. Continue with remaining tomato sauce.

  4. Season to taste.

  5. If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into plastic freezer bags.

Used dried bay leaves instead Equivalents 1 whole bay leaf = 1/8 to 1/4 tsp crushed or 1/4 to 1/2 tsp broken

I didn't have any of those cheeses except grated parmesan. I substituted with cheddar jack and mozzarella.
