Chipotle Black Bean Soup

Ingredients

1 tbsp Olive oil
2 medium Onion (red) , chopped
1 medium Bell pepper (red) , chopped
1 medium Bell pepper (green) , chopped
4 clove garlic , minced
4 tsp ground cumin
16 oz Black beans , dried
1 tbsp Chiles (chipotle) , chopped
7 cup Water
2 tbsp Lime juice , fresh
2 tsp Salt (kosher) , coarse
1/4 tsp Black pepper , ground

Directions

  1. Heat olive oil in large skillet over medium-high heat.

  2. Add onions and both bell peppers and sauté until beginning to brown, about eight minutes.

  3. Add garlic and cumin; stir one minute.

  4. Transfer mixture to 6-quart slow cooker.

  5. Add beans and chipotle peppers, then 7 cups hot water.

  6. Cover and cook on high until beans are very tender, about 3 hours, but longer if necessary.

  7. Transfer four cups bean mixture to blender; puree until smooth.

  8. Return puree to remaining soup in slow cooker.

  9. Stir in lime juice, salt, and pepper.

  10. Adjust seasonings to taste. Ladle soup into bowls. Serve with desired toppings.
