Ultimate Loaded Potato Soup

64 oz Vegetable Broth
1 1/2 cup Onion , diced
6 medium Potatoes , cubed
2/3 cup Butter
3/4 cup Flour
4 cup Milk
1 tsp Salt
1 tsp Pepper
2 cup Crumbles , browned
8 oz Sour Cream
2 cup Sharp Cheddar Cheese
3/4 cup Onion (green) , sliced


  1. In a large skillet cook crumbles until crispy. Add onions, cook until tender.

  2. In a large 6 quart soup pot mix onion, broth and potatoes. Heat to a boiling then reduce heat to a simmer cooking about 10 minutes or until potatoes are tender.

  3. In a skillet, melt butter over low heat. Stir in flour with a whisk until smooth. Cook and stir 1 additional minute. Gradually stir in 2 cups of the milk. Pour the milk mixture into the potato mixture. Add remaining 2 cups of milk, salt and pepper. Cook over medium heat stirring constantly with a whisk until mixture is thick and bubbly.

  4. Stir in half of the crumbles, sour cream, 2 cups of the cheese and half of the green onions. Cook until heated and the cheese is melted. Evenly top each individual servings with remaining crumbles, cheese and green onions. Serve with hot buttered rolls or crackers.

Don't freeze the broth/potato mix, makes the potatoes tough and they don't soften very nicely.
